i get asked by clients all the time what i eat for lunch everyday. well here it is; this is what i eat almost every day and no, i never get sick of it. (yeah, it’s that good!) however, there are a few tricks to this recipe that will make your life so much simpler.
- make these in bulk. costco is my one true love (after my husband of course!) and i have a love/hate relationship with each of the sample ladies individually (yes, calories from samples still count!!). i buy the 4 pack of ground turkey from costco and the 6 pack of avocados.
- if you don’t already have a food scale, invest.
- remember those old “slap-chop” infomercials?? yeah, it’s actually pretty awesome and cuts down on prep time for this recipe big time.
- i’m not a “girl-on-grill” chick. my grilling skills are about as proficient as my website designing skills; point being if i can do it ~ anyone can! i use a calphalon counter top grill (similar to a george foreman or a “fighter grill” as granny refers to it!).
- ziplock vacuum sealer bags will keep your turkey burgers “so fresh and so clean”…from freezer burn. seriously, best $5 dollars i’ve spent in a while…
juicy jalapeño turkey burgers
- 4-6 lbs lean ground turkey meat (this is the costco sized recipe…don’t get overwhelmed)
- 1 onion diced/”slap-chopped” (optional)
- 4 jalapenos diced/”slap-chopped” (optional)
- avocados (1/3-1/2 avocado per burger)
- salsa (2 tbsp per burger)
(chill out weenies, if you don’t like it spicy, feel free to omit the jalapenos)
tear parchment paper into 4×4 squares and lay out on a cookie sheet.
mix turkey meat, diced onion, and jalapeno together in a big bowl with your hands then weigh out into 4 oz patties. now the juicy part; i found that if you make your patties really thick and plump instead of flattening them out, they are much juicier after you grill them. no one likes a dry turkey burger ~ you know you’ve had one before…gag. after you have your tray full of burgers, slide it into the freezer for 30 min to an hour, until the burgers are firm. remove from the freezer and place the burgers in a vacuum seal bag and suck the air out. boom! you have turkey burgers for days…and maybe even weeks. just store in freezer until you’re ready to enjoy.
ready?? okay, take out the amount you need and re-vacuum seal the rest (it’s ridiculously easy, i know). you can let the burgers thaw naturally, or if you’re as impatient as i am, use the “quick thaw” button on the microwave.
on my grill, these usually take about 6 minutes per side, but this will obviously vary for every single person reading this. just cut the burger open to make sure its done on your first few attempts, no shame. dry burger=overcooked, so modify time accordingly the next time you make them. finally, top it off with some salsa (i highly recommend mateo’s salsa from costco on this burger specifically…but any salsa is fine) and a few slices of avocado. goes great with some savory sweet potato french fries…recipe coming soon!
okay…now you can go impress someone with dinner tonight. :)
**these can also be grilled a few days in advance and refrigerated to really make life easy…just sayin’!
