before the cookie, there was the cookie dough…
okay, confession session: sometimes my cookie dough never even makes it in the oven. (i am not condoning this type of behavior!) this cookie dough was different though, i had no intention of ever even making a cookie out of this dough.
i’ve tried “healthy” cookie dough before, but my heart was broken after doing research on the nutritional breakdown of cookie dough made with garbanzo beans! 350 calories and 70 carbs were added from the beans alone! i had to come up with a better alternative…fast!
let me introduce to you my skinny chocolate chip cookie dough. weighing in at only 350 calories for the entire recipe, half the carbs of a can-o-beans, 2 tiny grams of sugar, and loaded with 32 grams of protein! sign me up! :)
skinny chocolate chip
- 1/2 c oats
- 1/2 scoop chocolate protein powder
- 2 tbsp PB2
- 2 tbsp stevia or splenda
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 tbsp unsweetened vanilla almond milk (or coconut milk)
- 1/4 c liquid egg whites
- 1 tbsp raw organic cacao nibs
now, put all ingredients into a blender. i use a blendtec blender & it works amazing. a food processor might also work, but may be more difficult to remove the dough? blend until smooth. okay, here’s the hard part…you have to put it in the refrigerator to chill for about 10 minutes to thicken it up and make the consistency more like cookie dough. trust me, its worth the wait. i like to put a little spoonful of regular peanut butter on top & sprinkle with a few extra cacao nibs.
