cookies!! i love cookies!! in fact, i would probably rather forgo an actual meal for a cookie if i had that option. i can’t be the only one ~ right?
desperation can make people go to some pretty crazy extremes. as my craving for a cookie reached a ridiculous level, i decided to take my favorite healthy salad topper & attempt to make it into a cookie!? like i said, extreme. however, this is starting to sound more and more like determination rather than desperation…with a little bit of justification on top! ;)
the important part is that it was a great success!
choco-almond-hemp-heart cookies
- 1 egg (or 2 egg whites)
- 1/3 c organic coconut sugar
- 1 tbsp organic agave
- 1/2 tsp baking soda
- 1/2 c almond flour (i made my own by blending raw almonds in my blendtec!)
- 2/3 c organic almond butter
- 1 c hemp hearts (costco)
- 1/4 c “enjoy life” chocolate chips or carob chips (optional)
preheat oven to 350 degrees. beat the first 4 ingredients together then add in the almond flour and almond butter and continue beating until mixed well. stir in hemp hearts followed by chocolate chips. using a cookie dough scoop, place rounded balls of dough onto ungreased cookie sheet or parchment paper (if you don’t own this stuff, you’re only making life harder than it has to be). flatten out cookies with a small piece of parchment paper and your hand. bake for 10 min and transfer to cooling rack immediately. this is important to ensure they are crispy on the outside and chewy in the middle! makes 2 dozen delicious cookies!
