i know that i’m new to this whole food blogging thing…but i’ve recently realized it’s nearly impossible to bake, shoot, edit, write, and post all in one day. (and if you do, congratulations…you are a total rock star blogger!) what’s my point?? my point is that i’m totally wishing i had one of these cookies to eat right now as i stare and drool over these pictures while typing. fortunately and unfortunately, they were sold this past weekend.
yes, i said sold. it’s become a growing trend at the gym i work/train at to ‘bid’ on or place orders for my recipe leftovers. i love it. it gets temptation out of my kitchen during moments like this. so i guess it’s more like a love/hate it.
the great thing about this recipe is that it makes 20 cookies! that means my husband and i got to “taste test” 8 cookies between the two of us and still sell a dozen!
here’s another great thing…my husband doesn’t even like pumpkin. top that off with me cramming my pumpkin filled recipes down his throat for the past 6 weeks and he is now so sick of pumpkin that he is on the verge of developing a gag reflex from the mere mention of the “p word.” what’s so great about that?? my husband loved these (pumpkin) cookies! seriously, i was completely prepared to eat them all by myself. no such luck.
more greatness?? yep! not only did i add an entire scoop of protein powder to this recipe, but there is no oil or butter in it what-so-ever. i’m pretty sure that classifies these as healthy cookies. :) go ahead, enjoy.
pumpkin oatmeal craisin walnut cookies
- 1/2 cup pumpkin puree
- 1 egg
- 1 tsp vanilla
- 1/2 cup whole wheat flour
- 1/4 cup cinnamon protein powder (i used bsn-lean dessert)
- 1 1/2 cup oats
- 1/4 cup organic white sugar
- 1/4 cup organic coconut sugar
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- pinch of salt
instructions:
preheat oven to 350 degrees. line your baking sheet with parchment paper.
in a small bowl whisk together the pumpkin, egg, and vanilla until well combined. set aside. in a separate bowl, combine flour, protein powder, oats, sugars, baking powder, baking soda, salt, spices, dried cranberries, and chopped walnuts. fold together the wet and dry ingredients until just combined – take it easy…do not overmix. the cookie dough will be super thick.
using a medium sized cookie dough scoop (or spoon) drop spoonfuls of dough onto cookie sheets and slightly flatten out into the shape you want your cookie. (these cookies do not spread out much as they bake.)
bake for about 12 minutes (or until lightly browned). remove from oven and allow cookies to cool on the cookie sheet for at least 3-5 minutes longer before transferring to a wire rack.

that’s a great idea! i wouldn’t adjust anything! you could maybe try adding in a little flax seed, and bake it in a pan. i’m not sure on time, i would start with 20 minutes though. until a toothpick comes out clean in the middle! let me know how it turns out! :)

Absolutely! There is cinnamon in the recipe too so I think just using plain vanilla will be fine. I planned on using vanilla, but found the cinnamon stuff stashed in the back of my cabinet! :) I’m posting an awesome protein pumpkin pie recipe tomorrow that uses vanilla protein powder!
