protein party cupcakes…

a protein party in your mouth…

this recipe is dedicated to the birthday boys at camp hero fitness! :)

who doesn’t want a cupcake on their birthday??  yes, even personal trainers enjoy stuffing their face with a cupcake every once in a while!  however with a national physique show less than two months away, i needed to come up with a new protein packed cupcake that wouldn’t jeopardize the shredded six-packs these guys have worked so hard for! so, here’s a cupcake that you don’t even have to feel guilty about bringing into the gym!  okay, it actually gets even better…protein is (literally) the icing on top of this cupcake! for real. ;)

protein party cupcakes

  • 1 scoop cupcake batter protein powder
  • 1 scoop vanilla protein powder
  • 1/4 c. bisquick
  • 1/2 t baking soda
  • 1/2 t baking powder
  • 2 tbsp stevia
  • 2 tbsp rainbow sprinkles
wet ingredients:
  • 2 tbsp macadamia nut oil
  • 2 tbsp unsweetened applesauce
  • 2 tbsp unsweetened vanilla almond milk
  • 2 tbsp 0% greek yogurt
  • 2 tsp vanilla extract
instructions:  preheat oven to 350 degrees and spray cupcake liners with cooking spray.  mix all your dry ingredients together in a bowl.  in a separate bowl, whisk together the wet ingredients until smooth and stir into the dry ingredients.  fill cupcake tins about 1/2 way full and put in the oven for 7-8 minutes (test by making sure a toothpick comes out clean).

vanilla protein icing

  • 1 scoop vanilla protein powder
  • 4 oz 0% greek yogurt
  • 2 tbsp stevia
  • 1/4 tsp vanilla extract

mix protein, greek yogurt and stevia together until smooth and then add in the vanilla extract.  cover frosting and place in refrigerator until ready to frost your cupcakes!
