24 weeks and baby is as long as a kale leaf. mama is craving fruit and all things peppermint.
i was meaning to post this recipe immediately after thanksgiving, but this past week and a half has been absolute madness… #preggoprobs.
the good news is you will soon benefit from some of the madness… like making 4 dozen of these for the annual food blogger cookie swap that raises money for kids cancer research. ♥ {recipe will be posted next week!} they turned out amazing!! almost as good as last year’s cookie swap recipe… which is still my favorite cookie of all time.
cookies. these bring us to reason number #1,738 of why i need this detox smoothie in my life right now: receiving dozens of delicious cookies in the mail. peppermint bark is number #1,739. anyone else ??
okay, so about the smoothie… remember this super-green, superfood smoothie?? (currently known as my pregnancy pina-colada!) well it was taken up a notch with a few incredibly simple ingredient swaps to make it the perfect detox smoothie.
the coconut water and ginger to help detoxify and cleanse the body, and the chia seeds add ridiculous amounts of omega-3s. all the vitamin c this smoothie packs is crucial to keep your immune system on point during the season of sickness that is upon us. my husband and i are the only ones who have not gotten sick out of our group of friends… it’s gotta be the smoothie–right??
a little peppermint bark probably didn’t hurt either! ;)
side note/free tip: holiday gatherings and sickness do not mix well… so to help combat the sick-os, we created an “emergen-c bar” at a dinner party this past weekend {as well as provided massive amounts of peppermint bark, of course!}… the emergen-c bar was a total hit. especially with kids. seriously, you should steal this idea. nobody will be mad.
so i guess this is technically an immune-boosting, body-detoxifying, superfood smoothie. yes please!!
one more little tip… you can take your smoothie to a new level of nutritious by simply adding a scoop of vanilla (or banana) protein powder to this recipe. it doesn’t change the taste at all. :)

ingredients
- 1 small banana
- 1 small apple
- 1 cup frozen mango
- 2 cups kale
- 1.5 cups coconut water
- 1 tbsp chia seeds
- 1/2" piece of fresh ginger, chopped
instructions
- put all ingredients in high-powered blender and blend until smooth & creamy!
- serve cold.
Notes
because there is no ice added to this smoothie, you can put a lid on the leftovers and save it in the fridge for a day or so... mine was still delicious the next day!
Sounds great! I’m always putting spinach in my green smoothies but this is a great reminder to mix it up!
