(gluten-free!) chocolate peppermint rice krispie treats

today, i am answering one of the two age-old christmas party questions:

  1. what to wear
  2. what food to bring?

if you think the second question doesn’t matter…think again!

i had a realization the other day.  for a woman (and i can’t imagine it would be any different as a man), the dish you bring to a party is like your entry into a cooking competition.

no self-respecting person wants to bring an average recipe that nobody really eats, and leaves you taking home most of the leftovers anyways.  there is always a winner at the end of the night and they always receive a prize…

however, being that this is an unspoken contest, there is no award presentation or trophy handed out.  the winner receives back the dish they brought their food in, empty…that is equivalent to 1st place!

now that i’ve got your competitive engines ready and raring to go…how about an award winning dessert that only costs $5.00 to make and and says ‘holiday’ all over it!

these fancy chocolate rice krispie treats are not only gluten free, but have an added hint of peppermint extract that transports any kid or adult into a delicious winter wonderland!  it’s like a grownup christmas version of this classic childhood favorite!  as with all of my sweets, i had to tweak it a bit to make it a little healthier than your average rice krispie treat.  I used a mixture of coconut oil and organic butter to keep the texture, taste, and consistency true to what you remember as a kid.

(gluten-free!) chocolate peppermint rice krispie treats

ingredients

  • 2 tbsp organic coconut oil
  • 1 tbsp organic butter
  • 1 tsp peppermint extract
  • 1 (10 oz) bag of jet-puffed peppermint marshmallows (got them @ target)
  • 6 cups (gluten free) cocoa pebbles
  • 8-10 sugar free peppermints, crushed in a food processor.

instructions

  1. line an 8x8 (or larger) baking dish with parchment paper (i like my treats thick!)
  2. in a non-stick stock pot, melt butter and coconut oil together over medium-low heat.
  3. add the peppermint extract.
  4. add in the peppermint marshmallows, stirring constantly until almost completely melted.
  5. add in the cocoa pebbles and stir until evenly coated.
  6. press into baking dish using a piece of parchment paper. (i just leave the parchment paper pressed on top until cooled in fridge, that way it doesn't stick when removed!)
  7. place in fridge for about 30 minutes to set before cutting.
  8. place peppermint dust in a small square container and dip top half of each rice krispie treat into the crushed peppermint pieces for a pretty 'pepperminty' effect. :)
