a {super-yummy} superfood smoothie loaded with fruits and veggies that will energize you and make your skin glow from the inside out.

week 12.  mama is officially the big 3-0, these pregnancy-themed posts are 30% complete, and baby is now the size of a kiwi…yumm!!

i’m kinda obsessed with kiwi. (weird??)  it’s my go-to fruit topping at the frozen yogurt place.

really though, what’s not to love?  it’s a sweet little tropical fruit that just-so-happens to have a ton of health benefits too!

it’s loaded with vitamin e which makes your skin glow!
it’s full of fiber and specific enzymes that help aid in digestion
it’s a great alkalizing food that helps regulate your body’s ph level.  (alkaline balance = fountain of youth)

i just celebrated my 30th birthday… so the little part of me that’s freaking out about getting “older” is all about finding that youthful fountain… who knew it tasted so good!?

let me clarify, i know 30 isn’t old.  i actually don’t think turning 30 would be quite as bad if it weren’t for my dashing young 28 year old husband who reminds me daily of my newly attained age. :)  i really can’t complain though, he’s wonderful.  to help keep me feeling young and fun, he surprised me with a trip to disney world for my 30th birthday!  a fun little play-date for just the two of us before we start poppin’ these babies out. :)

a theme park during the first trimester of pregnancy is quite the challenge.  we just got back yesterday and i was dead tired!  this superfood smoothie was just what i needed to energize me to get back in the swing of things… kale yeah!

plus, pregnancy acne is real people.  (not to brag, but i currently have the skin of a teenager… not quite the fountain of youth i was searching for.  hah!)  this smoothie has been a God-send to say the least.

okay, lets get to the recipe… a few things before you start your blender:

→ you may use kale or spinach.  i prefer kale, but both green veggies are super nutrient dense and play a role in removing toxins from our bodies.
→ protein powder… i’ve used both vanilla and banana protein powders in this smoothie and both were delish.  be creative and tell me about it.
→ what’s up with the egg whites??  let me assure you, pasteurized egg whites are completely fine to consume raw in your smoothie… it’s not like eating a raw egg.  it will not make you sick.  what it will do is add an additional boost of protein to your shake and give it a creamy, frothy texture that is unlike anything else!!  just trust me on this one.  for a vegan smoothie, you may substitute the egg whites for additional almond milk.

Yield: 2 servings

Serving Size: 8-10 oz

ingredients

  • 1 kiwi
  • 1 banana (frozen)
  • 2 cups kale (or spinach)
  • 1 cup ice
  • 1 scoop protein powder
  • 2/3 cup unsweetened vanilla almond milk
  • 1/3 cup egg whites (may substitute for additional almond milk)

instructions

  1. place all items in blender and puree until smooth. (if using something similar to a blendtec, this takes about 17 seconds... times will vary according to blender used)
  2. serve smoothie immediately.

  • I used to have rosacea and juicing beets along with other fruits and vegetables eliminated my acne and gave me glowing skin. I can’t wait to try this recipe!
